Cheddar   Cady Cheese Flavors
     

Flavor: Our cheddar has a rich, nutty flavor that becomes increasingly sharp with age. Its texture is smooth and firm, becoming more crumbly over time. Most of our cheddar is golden, but it is also available white.

Best paired with: Apples, pears, onions, tomatoes, red wines such as Zinfandel or Merlot; pale ales or stout beers.

History: The earliest known forms of cheddar came from a village in Somerset, England during the 12th century. It was such a loved cheese, it's said King Henry II ordered five tons of cheddar in the year 1170, and his son, Prince John did the same a decade later.

Colby   Cady Cheese Flavors
     

Flavor: Our Colby has a firm open texture with a light yellow to orange color and a mild, mellow flavor, similar to young cheddar.

Best paired with: Apples, pears, onions, tomatoes Red wines, such as Burgundy or Cabernet Sauvignon; lager or pilsner beers.

History: Colby cheese is original to Wisconsin, first made in Colby, WI, in 1885.

Monterey Jack   Cady Cheese Flavors
     
Flavor: This semisoft cheese has a smooth open texture, is creamy white and has a mild flavor.

Best paired with: Apples, dried fruits, nuts, vegetables, and olives; a variety of wines, such as Chardonnay, Pinot Noir, Merlot, and Riesling; whole grain crackers; pilsner beers or brown ales.

History: The early forms of Monterey Jack originated from Monterey, California  in the 1800's, made by Mexican Fransiscan Friars. It was first mass-produced by California businessman David Jack, who introduced the mild, white cheese we know today. Nicknamed "Jack's Cheese," it eventually evolved into "Monterey Jack" to incorporate its complete history.

Gouda   Cady Cheese Flavors
     
Flavor: This semisoft cheese has a firm, slightly yellowed body and also has a mild flavor.

Best paired with: Apples, dried fruits, nuts, vegetables, and olives; a variety of wines, such as Chardonnay, Pinot Noir, Merlot, and Riesling; whole grain crackers; pilsner beers or brown ales.

History: The earliest forms of Gouda came from The Netherlands, where the cheese was named after the town "Gouda". It also accounts for more than half of Netherlands' cheese production.
