Turn an everyday dinner into something unforgettable with this Gouda Gruyere Chicken Quesadilla. Made with rich, melty Wood River Creamery Gouda Gruyere, this recipe delivers the perfect balance of creamy, nutty, and slightly sweet flavor in every bite.
Ingredients
1, 8oz block of Wood River Creamery Gouda Gruyere, shredded (use more as desired for extra cheesy quesadillas!)
2 Cups cooked, shredded or diced chicken
4 teaspoons taco seasoning
4 large tortillas
non-stick cooking spray
toppings of choice for serving such as fresh salsa, cilantro, guacamole, and/or sour cream

Preparation
- In a medium bowl, stir together the chicken and taco seasoning and set aside.
- Heat a large skillet over medium heat, then coat with non-stick cooking spray.
- Assemble the quesadillas: In the pan, lay one tortilla flat and top half of the tortilla with about 3-4 Tablespoons of the shredded Gouda Gruyere. Spread 1/4 of the chicken evenly on top of the cheese, then top with another 3-4 Tablespoons of shredded Gouda Gruyere. Fold the empty tortilla half over the toppings, pressing gently.
- Cook the quesadillas: Cook on the first side until golden and crisp, adjusting the heat as needed so the quesadillas are crisp but do not burn (about 2-4 minutes, depending upon your stove). Carefully flip and cook the other side for about 2 more minutes, until that side is also a light golden brown.
- Transfer the cooked quesadilla to a cutting board and repeat with the remaining ingredients.
- Let the quesadillas cool for a few minutes before cutting with a sharp knife or pizza cutter into pie-shaped wedges.
- Enjoy hot with toppings of choice.
