Hot Honey Corn Fritters

Recipe Description

Golden, crispy on the outside and soft on the inside, these Corn Fritters are packed with sweet corn and savory flavor in every bite. Made with Wood River Creamery Original Cheddar Gruyere Spreadable Cheese, they deliver a rich, creamy texture with a perfectly balanced cheddar-forward taste and a hint of nuttiness.

Ingredients

½ Cup Wood River Creamery Original Cheddar Gruyere Spreadable Cheese

2 Tablespoons milk (2% or whole)

2 large eggs

½ teaspoon baking powder

½ teaspoon salt

½ teaspoon chili powder

¼ teaspoon black pepper

¾ Cup all-purpose flour

1, 15 oz can of sweet corn kernels, drained, rinsed, and patted dry with a paper towel (about 2 Cups)

  • If using frozen, thaw the corn, then pat dry with a paper towel
  • If using fresh, cut the kernels off the cob

⅓ Cup fresh chopped green onions, green parts only

2-4 Tablespoons neutral oil for frying (like canola or vegetable oil)

Toppings of choice (optional): more spreadable cheese, hot honey, crumbled crispy bacon, sour cream, fresh herbs, etc.

 

Optional Ingredient:

1 diced jalapeno (deseeded and ribs removed) – mix in at the same time as the corn

Preparation

Scoop the Wood River Creamery Original Cheddar Gruyere Spreadable Cheese into a large mixing bowl and microwave for 10 seconds to soften slightly.

Add milk and eggs to the mixing bowl and whisk to combine.

Next, whisk in the baking powder, all spices, and the flour until mostly combined.

Add the corn kernels and green onions, stirring to distribute them throughout the batter so no streaks of flour remain.

In a large skillet over medium heat, add enough oil to the pan to create a thin layer across the bottom (you can add more as you go).

Once the oil is hot, scoop ¼ cup-sized portions of the fritter mixture into the pan.

*Note: do NOT overcrowd your pan, plan to do 2-3 batches of pan-frying.

Cook for 2-3 minutes until the underside of the fritters is a deep golden brown (adjust the heat if they're browning too quickly). Flip and cook the other side for an additional 2-3 minutes.

Transfer the cooked fritters to a wire cooling rack. If desired, place the rack on a baking sheet and transfer it to your oven preheated to its lowest temperature to keep warm.

Repeat until all of the fritter mixture has been used.

Serve warm and enjoy!
